Two talented Southern Institute of Technology (SIT) chefs have been selected as finalists in the prestigious Proud to be a Chef (PTBAC) programme, which takes place in Melbourne, Australia, in February 2026.
Recent SIT graduate Sam Kissell and current cookery student Hery Sakti will join 30 other emerging chefs from Australia and New Zealand for the four-day event. The programme is all expenses paid and includes hands-on training, mentorship, and excursions across Melbourne. At the end of the event, one overall winner will be awarded an international scholarship worth over $10,000, with other awards also up for grabs including Best Sweet Dish, Best Savoury Dish and Best Social Media.
Invercargill-raised Sam Kissell, 20, graduated from SIT in June with both Level 4 and Level 5 cookery qualifications. He is now working at Voyager Estate winery in Western Australia. Sam described the experience of being selected as “an amazing opportunity” and said he was excited to bring his dessert concept to life during the programme. He will be mentored by Gareth Whitton, known for winning the first season of Dessert Masters in 2023.
Sam is looking forward to the full experience of the PTBAC programme, from developing his dish with mentor feedback to connecting with fellow chefs. Having competed in the Nestlé Golden Chef’s Hat Competition, where he won a gold medal in 2025, Sam is eager to continue learning and pushing himself as a chef.
Fellow SIT finalist Hery Sakti also expressed his excitement and gratitude at being selected. He described the experience as “surreal” and said he felt honoured to be part of such a high-level event. His dish reflects his Indonesian heritage while incorporating Thai influences gained from living in Bangkok for seven years.
Hery said he aims to tell stories through food and to make his Southland community proud. He credited SIT tutors for their guidance and support, naming several who had played an important role in his development.
SIT Hospitality Programme Manager, Glenn Stridiron, praised both students for their dedication and talent. He noted that their success not only highlights their own commitment but also reflects the high standard of education at SIT.
Fonterra Oceania, organisers of the PTBAC competition, also acknowledged SIT’s strong presence this year, with three impressive entries and two making it to the final.
